INGREDIENTS

cup all-purpose flour
1
cup yellow or white cornmeal
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1
cup milk
2
tablespoons melted butter
1
large egg, beaten
METHOD
Preheat
the oven to 325 F. Grease the sides and bottom of an 8 or 9 inch baking dish.
Sift
the flour, cornmeal, baking powder, baking soda and salt together in a medium bowl. In a large bowl, whisk together the
milk, melted butter and egg, Add the dry ingredients to the large bowl and stir
to combine.
Pour
the batter into the prepared baking dish and bake until golden brown around the
edges, about 20 minutes, or until a tester inserted into the middle comes out clean. Cool on a wire rack
before cutting into serving pieces.
Cooks Note: I did not have any cornmeal handy, so I used
Polenta instead, first placing it into a food processor and grinding to a finer
consistency.
