Hominy and Pozole
I had to change the name of
one of my recipes because it simply was not what it was originally called.
Pozole is a Mexican soup that dates back to the 1600’s and is made from field
corn that has been processed to remove the husks and the germ. This is also
called Hominy. When you grind up hominy, you wind up with what is called grits
throughout the Southern US.
The soup is made in two forms
Rojo and Verde. The Rojo is made with pork, red chilies and hominy. The Verde
is made with pork, chicken, tomatillos, green chilies and Hominy. The recipe
originally was called Easy Vegetarian Pozole. It contains two things that
neither Pozole would have; beans and tomatoes. I have added, or will add,
recipes for true Pozole in both Rojo and Verde style as well as a
more accurate vegetarian version – that is, if they turn out OK.
