INGREDIENTS

cup bulgur
½
cup brown rice
½
cup snow peas
2 medium tomatoes, diced ½ inch
4 green onions, sliced diagonal ½ inch
¼
cup crumbled feta cheese
¼
cup chopped flat leaf parsley
2 tablespoons white wine vinegar
2 tablespoons olive oil
2 tablespoons lime juice
2 tablespoons honey
METHOD
In
separate sauce pans, cook bulgur and brown rice according to package directions.
Drain if necessary and set aside in a large bowl. Remove the strings from the
peas and cut into ½ inch pieces on the diagonal. Add to the bowl.
Add
the tomatoes, the green onions, the feta cheese and the chopped parsley to the
bowl and mix all the ingredients. Whisk together the vinegar, olive oil, lime
juice and honey. Serve individual servings and pass the dressing separately.
