2 medium tomatoes
½ cup shredded Monterey Jack cheese
2 tablespoons bread crumbs
2 tablespoons butter, melted
2 tablespoons grated Parmesan cheese
METHOD
Grease the
bottom of an 8 inch baking dish, Preheat the oven to 325 F. Cut the tomatoes in
half across the middle and place the two halves skin side down on the prepared
baking dish. Evenly spread the jack cheese on top of the tomatoes.
In a
separate bowl, mix the bread crumbs, butter and Parmesan cheese and evenly
distribute over the tomatoes, Bake in the oven for 20 minutes or until the
tomatoes are soft and the cheese is melted. Remove and serve immediately.
