INGREDIENTS
1 cup Arborio rice
1 cup water
1 cup unsweetened coconut milk
2 tablespoons dried ginger powder
½ teaspoon salt
METHOD
In
a medium sauce pan over medium-high heat, add the water and coconut milk and
bring to a boil. Add the rice, ginger and salt; stir it around and bring back
to a boil. Cover and lower the heat to low and cook for 18 to 20 minute or
until all the liquid has been absorbed. Remove from the heat and serve. Will
make 2 to 3 servings.
